INGREDIENTS
6 oz turkey sausage (170 g)
1 cup water
1/2 cup turnip (medium diced)
1 cup yams (medium diced)
1 Tb butter
1 tsp fresh garlic (minced)
1/8 tsp cinnamon
1/8 tsp salt
1 pinch pepper
1 pinch paprika
INSTRUCTIONS
Cook turkey sausage. While the sausage is cooking, preheat a large non-stick frying pan on medium heat. Add water, turnip and yams. Cover and simmer for 10 minutes. Drain water and return to heat. Add butter and saute until nicely browned. Add garlic, cinnamon, salt, pepper and paprika and cook for 1 minute more. Serve turkey sausage and has browns together on a plate.
VARIATIONS & OPTIONS
Use half the amount of yam and turnip to reduce the carb count. To save some time, cook the sausage and hash browns mixture in the evening and reheat in the morning. To make one big breakfast skillet, dice the turkey sausage and add it to the hash browns. Then garnish with 2 Tb of your favorite cheese. To add some spice variety, add in 1 Tb of cilantro, rosemary or Italian parsley along with the paprika. The old cliche potato versus patato has resurfaced when it comes to differentiating between sweet potatoes and yams. For the purposes of this recipe, we are referring to the yams that have orange flesh. However, for some variety, we encourage you to experiment and use a mixture of sweet potatoes, yams, parsnips or even squash.
