INGREDIENTS
Dressing
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4 shallots (finely diced)
1/4 cup fresh basil (finely chopped)
Salt and pepper, to taste
Salad
6 oz stir-fry beef
5 small olives (sliced)
1 cup cucumber (large diced)
1 cup tomato (large diced)
1/2 cup low-fat feta cheese (crumbled)
1/2 cup onion (thin sliced)
INSTRUCTIONS
Combine all the ingredients in a large mixing bowl. Combine dressing ingredients and drizzle one serving on the salad and serve.
VARIATIONS & OPTIONS
For a great post workout meal, add 1/2 cup of chickpeas or beans to this salad and serve with whole grain bread. For some veggie variety, substitute onion with grated fennel or red papper. Also, you substitute fresh tomato with sundried tomato.
