Substituting cauliflower for rice or potatoes can be controversial, particularly for those not enamored with the substitution itself. For example, I LOVE cauliflower rice (aka weirdo rice), but it only is eaten by the kids with threats of another 30 day sugar challenge. We found a great recipe on PaleOMG that we tried out this Thanksgiving that was enjoyed by all; a mash of cauliflower, bacon, butter, heavy cream, goat cheese and green onions. Not just yummy, it was pretty simple to make as well.
